My CB1100 EX changes speed up and down hills in 6th.
I assume the RPM would alter slightly as well.
I find very little difference in RPM between 5th and 6th at 60 MPH.
Although there must be because the motor is quieter in 6th.
I prefer 5th because it hold better up hills, and slows better for tight cornering.
I wondered if I was wasting gas opening the throttle in 6th to climb hills.
So now I only use it on busy highways at speeds over 60 MPH.
Despite using 5th most of the day on twisty and hilly back roads, I still get 60 miles per Imperial gallon.
My knee dragging days are far behind me, but I still like to sweep through corners.
Now it is how smoothly I can do it, rather than how fast.
