G'day Scatchman, welcome to the forum.
Tyres for this bike are as rare as rocking horse scat thanks to the 18" rims. Many have gone one size up to solve the problem. I run Pirelli Angel GTs in 110/80-18 and 160/60-18 as do other members. Pirelli make the Sport demon in the stock size, but it's a bias ply tyre and I've personally been disappointed by the life of the rear. The Dunlop Roadsmart 4 has had a good review from one member I know and others have used the Bridgestone T32, although the front is said to be noisy.
Others will join in and you could try search for the multiple threads on this subject or look at http://cb1100forum.com/forum/showthread.php?tid=3118
