I have/had fast bikes. I've seen 150+. But the CB1100 puts a smile on my face at posted speed limit velocities, thank you very much.
If you want the CB1100 to go faster, then you don't really understand the CB1100.
Nice to have that option,I don't have a death wish but if i want to see triple digits,so be it. I will have the limiter removed at some point.

On a recent trip along a straight section of deserted highway, I found the speed limiter. The speedo showed 115 mph, and the GPS app on my phone said 113. I was tucked behind the Road Comet fairing as well as I could manage with the tank bag there. I have a rack and top box. I also had a T-bag on the seat behind me. The bike still felt planted. Not like my old V65, which got super light on the front end past 90. The CB1100 also felt like it had more to give. As DeSwami said back on page one: I'd rather speed be mechanically limited by gear/rpm than electronically limited by the ECU. That said, it was more fun to ride through the sweepers at 65.

The answer is: Yes. (per VJL who owns on and presumably has tested this out)
However, the original poster, DaSwami, asked a follow up question: "I mean why do it really? Any shots of speed above 112 mph are most likely to be brief, just for the fun of it"
The answer is: There is no answer posted yet. Just commentary and other questions. I wonder why Honda does this on some bikes, but not on others. If Honda has not issued a statement on the matter, then answers given here under are speculation.
(why someone would want to ride over 112mph is not a question that was asked by the poster, so to me, both the question and the answer and related commentary are irrelevant to the post.)
In Europe we have a strickt emission standard, called "Euro 4"

that have to be met by all new motorcycles. The CB1100EX/RS would not meet it without the speed limiter cause of the air/oil cooled slant 4 engine.
The Dealers and the bike magazines mentioned this as the "problem" for
the limited speed.
May be that this CBs were intended to sell to the European market first?!
Some times I'd love to speed up over 180 km/h... . just for a peak time
