How much taller is the HI seat versus stock? I am 6'1" and I believe I have some room before I am no longer flat footed when stopped. Unless my tires are flat and my shocks are missing...

It's 28mm taller than the stock US seat. I'm 6' and can still place both feet flat on the ground when wearing boots.
It's the inseam that matters, not your height.
Just got a reply from Takashi. K&H will not omit the brass plate, so I asked him to see if they have a stainless one, which will go with the bikes color scheme better.
Won't be a deal breaker for me, I just like the plain "stock" look better.
