So, it seems with taillight relocation, many are mounting side bags that obviously were not made for the CB. Which model of bike should I be using that has the same mounting points?

For what it's worth, I would really like some hard cases. I am interested in any so if there are some that are specifically designed for the CB, great. Even better, if there are some that are designed for another Honda, but would work on a CB, with light relocation, I would be into that as well. Especially if it means more selection and bigger sizes.

Givi makes the bags and SW Mototech makes the brackets specifically for the CB 1100.

Oh yea... not much room for bags with the lights where they are. Never seen hard bags on a CB without relocating the turn signals.

My new bags, from Hepco & Becker.
They are the "Junior 30" liter cases, the smallest they make.
The easy-off racks come off in 10 seconds with an allen wrench, and will take all of the different cases made by HB.
I chose these for the size and how they balanced with the lines of the bike.
The cases have two locks and the cases lock to the frame.
They leave plenty of leg room for a passenger.
I believe I can add my Honda tail rack but so far as I can see, I'll need to do some grinding on the rack. I'll post up when I have given it a try.
They required moving the tail lights See the photo from behind), but they came with all the needed hardware. It took me 4 hours or so to do the whole install, though I could do it in 1.5 now that I know the routine. You could likely do it in 45 minutes
Bottom line... very well designed and nice fit/finish. I think they look good on the bike and will let me travel with my stuff. Price was a big bite, but I hope to justify it with lots of miles traveled.

How do the boxes mount to the racks? Are they easy on and off?

Very easy on/off. Look at the photo of the back of the bike and you'll see a keyed latch. Just flip the latch and the bag pulls right off, but it's very secure when it's latched.

I got these because I wanted to be able to remove everything as easily as possible, but I haven't taken them off since I got them.

(PS: My daughter likes them because they have handles on the top, so she can hold onto them when she rides behind me.)
