The Honda Shadow is a good touring mount. One summer I took a month off and made a big circle around the U.S. on one. Perfect mile muncher.
Only 2 things would make me shy away from using the CB1100 as a long haul mount:
1. The valve inspection is every 8000 miles. That is way more often than I would want to have to deal with if you're really pouring on the miles.
2. Ditto for the tires being too skinny. They'd have to be replaced way more often that I'd care for.
