When younger, I did many long trips on motorcycles, some of which were not as comfortable as the CB1100. Generally, I average a mile-a-minute or 60MPH including stops. I do ride 75 or 80 on open roads and sometimes a wee bit faster if traffic is moving faster. I once did a 1000 mile day (Colorado Springs to St. Louis) while experiencing several thunderstorms on a 1976 BMW R90S. Last summer at age 65 rode the Gold Wing from NJ to Alabama and back with side trip through the Dragon. Traffic on I81 in WV and PA was doing 85 or so.
The CB1100 could be a decent long-distance bike but it has a couple of weaknesses - it vibrates a bit, has no wind protection and a smallish tank. I added a small fairing. I intend to ride mine from NJ to the Dragon in September as the Gold Wing is too heavy and bulky for those mountain roads.
