If I were your agent, I'd recommend going through your own insurance for this. NJ is a No-fault state so any medical bills you incur should be covered by your policy (I'm not licensed in NJ, but that's my educated guess on how it works out there) Additionally, you're likely to get a fairer settlement on the damage to the bike (assuming you have Collision coverage) than from the other carrier.
As others have mentioned, you can (depending upon state rules) purchase the salvage in the event the carrier totals the bike. If you want to go that route, I'd have a long and detailed conversation with someone you trust to do the repair work before signing off on the deal. You're going to want to be sure the repaired bike is safe and that the repairs cost less than the net settlement. With cars, it is almost always more cost effective to just use the settlement to get a replacement vehicle. From my experience, the "buy the salvage" option works out more often for bikes (and boats) than it does for cars.
