To be clear: Uninsured Motorist coverage DOES cover the insured's injuries if he is hit by someone without insurance. UNDERinsured Motorists coverage provides coverage for the insured's injuries if he is hit by someone WITH insurance, but with insufficient limits to fully cover those injuries. Lastly, Uninsured Motorist PROPERTY DAMAGE covers the damage to the bike caused by someone without insurance. To collect on any of this, you must not be at fault in the accident (although, there may be some exceptions to this in so-called "no fault" states)
RandyB is correct that increasing your PIP (and possibly your UM/UIM) coverage makes a lot of sense, especially if you are not currently carrying any other medical insurance coverage.
