The Guzzi motor is typically not happy much below 4k. With the new maps my Griso works well at lower rpms but is still happiest above 4K. Putting the coal to it, it hits red line way too easily.
I had a Quota with the same 2 valve head as the Breva (no CARC) and in the twisty bits I just kept it in 2nd and dialed the throttle up and down. Lot's of torque. Not like a Harley, the Guzzi likes to rev (but like early Honda 4's).
Stock seat on the Quota sucked rocks, the Griso is not much better; both addressed with custom seats.
