I've had to lay a bike down (550 four) because I came around a curve and there was a herd of deer in the middle of the road. But my most interesting encounter was with a black bear on the way to the rally last year. It was at night in the mountains of Virginia and I came around a curve and there he was in the middle of the lane running away from me. All I could think of as I was trying to avoid hitting him was "That's an awfully big dog, I wonder what kind it is?" It had moved into the left oncoming lane as I got up next to him and it was only then that I realized it was a bear. It gave me a glance and then veered off into the woods and we both went on our merry way. I'm just glad I didn't hit him.
