I've just bought a 1965 Yamaha, only 1,900 miles! The ONLY parts that have deteriorated are all the rubber/plastic bits, footrest rubbers, wiring grommets, cable covers, handgrips, etc. So I would hoard all those that you can get (others will want them too, in the fullness of time so you're unlikely to be stuck with those you don't need!).
Service parts wearing out and needing replacement are another matter. Certain electronic modules could be next to impossible to source, replace ( if dedicated to this model only) or even just repair, so an investment here might be a life-saver. Bearings should be OK to source in the years to come, but certain seals might not. Gaskets can be made but certain specialist gaskets might not. As has been mentioned, brake pads, clutch plates, brake discs, etc.
A chat with the Parts Man at your local Honda dealer could be revealing...
