Because of the possibility that those parts might be hard to obtain or unavailable when the need finally does arise. I understand both approaches (or viewpoints if you will).
I did some parts hoarding when it came to my Hawk GT because I witnessed parts being discontinued by Honda not long after I bought the motorcycle. To be fair, this might have started before I bought the bike, but I wasn't paying attention at that point in time. I did end up using a number of those parts over time. This is likely part of the reason why I got full asking price for the motorcycle when the time eventually came to sell.
What I learned with my Hawk was that the parts that disintegrate from time, even while just sitting (as opposed to those parts that tend to disintegrate from wear from use) were the hardest ones to come by in my experience. Your needs might not be as high if you have a climate controlled garage, but those are still parts that will be hard to come by should the need ever arise.
