Another option: Get a Suzuki SV650 to use for riding courses and track days. Not only do you learn how to modify a bike, but also which modifications make the most difference in traction, stability, cornering, acceleration, braking, etc. The riding knowledge as well as the mechanical knowledge carries over to the CB1100. That's the direction I plan to go, once I finish acquiring the protective gear required for the track.

I’ve got an early 2000 XR 200 sitting carb drained in my garage for years now. It is darn near new, barely ridden. Just don’t want to deal with Craig’s list people to get rid of it.

PDubs, it's too bad we live across the country from each other. I grew up riding XR's and I'd love to get one in good condition for my son.
