Alcohol will actually absorb some water and hold it in suspension. The trouble arises if you have a lot of water. Then the water and alcohol will separate from the fuel and collect at the bottom. Water removal and fuel anti-freeze products like HEET are primarily alcohol based.
Unless you expect a lot of water collecting in your tank for some reason, I wouldn't worry too much about that aspect.
My biggest worry about alcohol laden fuels is that they degrade faster and the alcohol comes out of suspension. Alcohol is corrosive over time and you don't want that sitting in a steel tank for long periods. For any kind of long term storage, Ferret's suggestion of a stabilizer is a good one.
