With regard to having the 1100F as a daily driver, it is possible but the bike is over 30 years old so it helps to keep that in mind.

Although yes it is strictly a one year model (in the US at least, I believe the 1100 was sold overseas for more than one year); and of course there are some unique parts to the 1100, such as the way a second cam chain drives the rear cam as compared to the 750 / 900 which have one chain for both front and rear cams; but a great many (non-cosmetic) parts are interchangeable between the 750F, the 900F, the 1100F, as well as the custom versions 750C and 900C (of course the Customs had a shaft drive and different transmission, so I'm not saying that everything is interchangeable). So given all these permutations and years of production and the relative simplicity and ruggedness of the design, the 1100F is not particularly rare in terms of parts availability.

Many parts are still available, either new inventory right from the Honda dealership or as aftermarket replacements. Some frequently worn, age degraded, or previous owner removed parts are getting harder to find, such as the original airbox, the four rubber plenums which connect the carbs to the airbox, and the four rubber plenums which connect the carbs to the intakes on the engine, as well as the original black chrome 4 into 2 exhaust are getting quite rare. Cosmetic parts like the sidecovers seem to get lost with time and un-repainted versions of those sidecovers are getting more rare and the seats tend to get ripped and then get recovered in a non-stock design which works fine for comfortable riding but decreases the value of the bike as a basis for restoration. But overall the engine is pretty simple (shim over bucket) and known to be reliable and the electricals are simple as well.

I'm partial to that era Honda sportbike so I'd vote that you restore it well enough to ride it and enjoy it, but flipping it as a whole bike and getting it in the hands of someone who will enjoy it and possibly restore it is also a fitting role for the bike.

How much is it worth? As much as some guy is willing to pay you for it. The prices are really all over the road, some great deals out there as well as some people who won't lower the price to meet the market, so YMMV.
