The regular camera with audio becomes the main focus and the 360 adds an extra layer to that. Those Insta 360's can be used as a camera for a regular photo and the perspective can be changed to a single video lens too.
Their big failing on a bike is the onboard microphones get totally overwhelmed by wind noise, you would be lucky to get the sound of the engine let alone anything else. Adding a microphone and all that entails is messy. As they are on a long pole (or can be) you would want a wireless setup which adds another layer of cost. You are just choosing the view you would like to see out of the overall 360 image and processing that so you are discarding the greater majority of the recorded data.
But you can make multiple videos out of the same 360 Degree footage. Say you are group riding with your 360 camera. You might decide to set the editing software to track "Dave" for 5 minutes and produce the video. Then go back and do the same for three other riders in the group. You then end up with four videos, each rider having their own footage. Subsequently in your editing software (separate from the 360 editing software) you can layer those four videos and chop and change between them to create a dynamic group ride shot. The possibilities are endless, just needs a little imagination.
It is a great bit of kit and amazing lens technology.
I can see the concept of the selfie-stick and the 360 footage cam, but how come he can show a view from behind and top of himself, and moments later from somewhere close to his knee. Does he get off the bike to make that positional adjustment ? And how come it appears sometime as if the stick swings around in the wind ?

The behind and on top are probably from one camera position. The lower shots would be from a repositioned camera yes. You can actually have a stick swinging around, there is that accessory but it isn't really something to use on a bike. The swing around is merely you choosing what camera angle you want in the 360 editing software. You choose a transition point and then manually drag the 360 image with your mouse (on a PC) to the new view and create another transition point. The software interpolates the image between those two transitions. The further apart those transitions the slower the image swings around to the new view. Shorten those points and it swings around more quickly.
As Nachodaddy says, there is a lot of video editing after the event in separate 360 editing software (free) to produce useful footage for a traditional 16:9 video thereafter.

You are welcome. Your questions got me looking into maybe getting one of those 360 cameras or a drone. Remind me sometime to tell you the story of one of my female biker friends who rode her first bike (Sportster) into her neighbor's pool the first time she rode it. She has put many thousands of miles all over the world on bikes since then.

The fence looked like Wiley Coyote went through it. The dealership named her "Commandant of the Harley Underwater Rider's Group." She learned to ride her Sportster and rode it all over Europe (where she was stationed as a US Air Force Nurse) and has had many full-size Harleys and other bikes since. This summer she rode several tours around the US, including the Route 66 tour with the "Women in the Wind." But, to my knowledge, she hasn't ridden in anyone's pool since 1995.

That's quite the story...my first bike as an adult was a Sportster...can't imagine what she must have been feeling as she looked at her brand new bike at the bottom of the sea. You say she learned to ride her Sportster...so it wasn't totalled?

I told her to just put a gold-fish in it and go. There was no crash damage that I could see. No dents or scrapes. She was bruised and sore from taking out the fence. She had the dealer pick it up and they had it for three weeks and it looked like new when she got it back. I thought all she really needed to do was change the oil and fuel and it should be good, since they do sit in the rain sometimes anyway. But it was her baby and she did it the right way.
