Given the front and rear tire sizes of our bike, it seems difficult to find anyone who makes both of the front and rear tires, and am just afraid those 18s might even be more difficult to find later on. Appreciate any insights out there.
I agree that finding replacements is difficult. So, when I picked-up my bike from the dealer, I immediately ordered a new set of the Dunlops from him. I'll keep a new set of tires in the garage so that I won't find myself scrambling, either when it's time for replacement, or if I should have a tire mishap.

D205. The Bridgestone BT45V is readily available. Mine came with Dunlops and I think they are tops but I am pretty confident the Bridgestones are good tires, too. The Bridgestones are a regular size offering, not OEM specific.

I could find plenty of front tires in the correct size but the rear was often a 150/70. Fortunately that is usually specified as being acceptable on a 3.50-4.50" rim and would likely work even better than the 140/80. I find I am using every bit of available rubber on the 140/80 so I think a 150/70 would be a good change. The FZR400s and 600s also used an 18" rear rim, which was 4.00" in width, and were very amenable to running either a 140/70 or 150/60, the latter being the superior performer.

The 110/80V-18 and 150/70V-18 combo can be had in a few different brands and types of tires and is probably going to work well.
I have an Avon Road Rider 150 on the rear and couldn't be more pleased. Looks good, sticks well in the corners and is wearing well.
The Pirelli Speed Demon's come in our size and are V rated. I was just talking about them! Only a couple hundred bux for both tires too from a few places online.
